Greek Pasta Salad
This recipe came from one of Erynn's friends Reenie. It has become an oft-requested favorite at parties.
- Ingredients:
- 1 lb pasta shells (medium)
- ¾ cup ripe olives, sliced and drained
- ½ lb feta cheese, crumbled
- Shredded parmesan
- 1 small tomato, diced
- 1 cup mayo
- 1 cup Italian dressing
- 1 tbsp dried oregano leaves
- 1 tsp kosher salt
- Ingredients from original recipe that Erynn typically leaves out:
- 1 cup celery
- 1 tsp ground black peppercorns
Cook pasta, rinse and chill
Combine pasta with olives, feta, parmesan in a bowl
In separate bowl, whisk together mayo, italian dressing, oregano, salt, pepper
Pour dressing over salad and stir
Fold in tomatoes
Best served after chilled for an hour or so.
