This recipe is one of my mom's specialties. I really don't know measurements for all the ingredients. Basically, it has so much lard in it, there is no way you can screw it up. In fact, there isn't any taco or salad in this taco salad, which is why it tastes so good.
Brown the onion in a large skillet. Add the mince to the skillet and cook onion and mince until browned thouroughly. Let the mince sit and cool to room temperature.
Grate the block of chees into a large bowl. Add the room temperature mince/onion mixture to the cheese and stir. Add the chopped tomatoes, lettuce and Doritos and stir. This is where the portion size is not exact. Basically add enough so you get about the same ratio of brown, red, yello, and green from the mince, tomato, cheese, and lettuce respectively in the bowl. This is actually impossible to screw up.
When it's time to serve, add the bottles of 1000 Island Dressing and mix thoroughly. The exact amount of dressing is determined by how dry you want the mixture and how much lard you can tolerate. You want to hold off on adding the dressing since it will eventually make the Doritos soggy.
