I went fishing with one of his work colleagues and his two sons in Sommedieue. We were at the Domaine de Sommedieue, which is a restaurant and fly fishing club run by Bruno. He limits each day to 15 fly fisherman over 5 or so well stocked ponds. He then rings a bell at 12:30 and everyone enjoys a nice lunch. Very civilized.
We had some training from Sebastian at Cast-Again.com whos shop is 50m from the restaurant/reception. Wes' two boys had never fly fished so Sebastian showed them the ropes in the morning before leaving us alone for the afternoon. The fish weren't biting (even the experienced folks didn't catch much) so it was a little disappointing. But in think the overall experience at the site was too good not to go again.
